Cashew Rice Pilaf
Tonight I tried a new recipe with our grilled teriyaki chicken and we loved it so I thought I would share it with you. Â I found the recipe here. Â Next time I think I’ll grill up some pineapple as well. Â Over-the-top-delish!

1/4 c. butterÂ
1/3 c. finely chopped onionÂ
1 c. uncooked regular long grain riceÂ
2 c. chicken brothÂ
1/2 – 1 tsp saltÂ
1/2 c. cashews, coarsely choppedÂ
1/4 c. chopped FRESH parsleyÂ
In large saucepan, melt butter. Sauté onion until soft. Add rice; stir until coated. Stir in broth and salt. Cover; simmer 24-30 minutes until rice is tender and liquid is absorbed. Stir in cashews and parsley.
