We had fun testing out my new kitchen for our annual Christmas baking day this year. No new cookie recipes to share because we made the same ones as last year. But I did try a new recipe from my mother in law for everyone to munch on while we were baking that I loved. I would describe it as a cross between caramel corn and rice crispy treats. Easy to make and highly addictive!

Soft Caramel Corn
2 bags microwave popcorn (I love to use PopSecret Homestyle)
1 stick of butter
1/2 cup brown sugar
8 large marshmallows
Pop popcorn and remove unpopped kernels. In a small saucepan, melt butter, sugar, and marshmallows over medium heat stirring frequently until everything is dissolved. In a large bowl, gently mix popcorn and caramel sauce together. Spread mixture on a lined cookie sheet and allow to cool.

One of my favorite things about vacation is trying new foods. When on vacation, worrying about calories goes out the window. My parents lovingly watched all the grandkids one night so that we could go out to our favorite restaurant, Mama’s Fish House. It never disappoints. I ordered a macadamia nut encrusted pork tenderloin with mashed sweet potatoes. I was so excited to eat it, I forgot to take a picture first! I think Cory was relieved, but then I did remember to bring out my camera and take a picture of our desserts.IMG_4005IMG_4013Creme brulee topped with a passion fruit sauce. We also enjoyed eating at Kimo’s, Alexander’s Fish Co, and Pita Paradise.

The boys loved hanging out on the beach. We had a blast watching them play in the water and sand, boogie boarding, paddle boarding, and hunting for sand crabs.IMG_3856 IMG_3999IMG_4021Hey there little crabby patty, you’ve got sand in your eyes!IMG_3922IMG_3985The paddle boarding was really fun, but did require a lot of balance. My dad thought it was so easy, he just started doing cool tricks on it. :-) IMG_3993IMG_3966IMG_3953

Today we drove out to Schnepf Farms to meet up with some friends and pick us some peaches.    We also rode the train and played on the playground at the farm.  It was warm, but worth it!IMG_3691IMG_3694IMG_3696IMG_3702
Hoping to make a fresh peach pie today!

Just had one of those milestone kind of birthdays.  My mom, grandma, aunt, sister, and cousins and I all went out for lunch to celebrate.  I felt very loved!  I took pictures of my food because Cory wasn’t there to tell me not to :-)

While there are some things I will miss about my twenties, I’m not going to dwell on them.  Here are some of the thoughts I’ve had about being thirty…
I’d rather have wrinkles than acne…
I’d rather have God given confidence than insecurity…
I’d rather have my kiddos than a tidy house…
I’d rather have true love than new love.
At least that’s what I’m telling myself!
